Beans and Pulses (Ospria)

Fresh Beans and Pulses are a staple of the Cypriot diet.  The general term for these dishes is Ospria and perfect for the vegetarian or vegan diet.  Many years ago these were frowned upon and used as cattle fodder in some countries.
