Courgettes and Potatoes with eggs. Kolokouthkia & Patates me ta auga
You can also make this dish with just potatoes or just courgettes if you prefer.

1 kg potatoes
1/2 kg courgettes
4 eggs
Salt and pepper to taste


These are just rough quantities, once you have made this a few times you can change the quantities to suit. For example you might prefer more potatoes or less courgettes and one egg might be enough for your taste.

Wash and peel potatoes and courgettes. Cut into squares.
Fry the potatoes drain on kitchen paper and put to one side. Do the same with the courgettes.

Remove the oil from your pan then add prepared potatoes and courgettes. Re heat the potatoes and courgette mixture as desired. Add the beaten egg and cook to desired consistency.
