Taramasalata or Taramas
Smoked Cods roe - you don't need a lot. One small coffee cup or small glass should be enough
1 small onion grated
Fresh Breadcrumbs, 1 or 2 glasses maybe more
1 glass Water
1 mashed potato (optional)
1 grated aubergine (optional). If you use aubergine, make sure to squeeze some lemon juice on it as it goes dark very easily
Lemon juice to taste
Olive oil to taste

This recipe is again a matter of taste so you can add as much or as little lemon juice and olive oil as you like.

It is best make in a liquidiser as it needs a lot of beatting.

Beat the cod roe with a little lemon juice and add a little olive oil. When mixed add the onion and/ or potato/ aubergine, some breadcrumbs and beat well adding lemon juice, water and olive oil. Keep switching off the blender and stirring the ingredients, to ensure an even distribution. Add more breadcrumbs, oil or water and lemon juice to desired taste and texture. Remember the mixture will thicken in the fridge so you may have to add some lemon juice or oil when you take it out.
